The chia is really nice here as it absorbs any of the liquid that comes out of the fruit during transport, so you don’t end up with a mess at your picnic!
½ a medium watermelon (600g)
1 cantaloupe or other small melon (600g)
125 grams blueberries
3 tablespoons chia seeds
3 tablespoons cashew butter
2 tablespoons lemon juice
Zest of a lemon
2 teaspoons maple syrup (optional)
1 teaspoon finely grated ginger
Peel and cut the watermelon and cantaloupe into 3cm pieces. Slice the nectarines, and halve strawberries if they’re quite large. Place the fruit into a large bowl or container.
To make the dressing, add the cashew butter, lemon zest, lemon juice, maple syrup, and ginger to a small jar. Shake until fully combined and add water to thin if needed
Add the chia to the fruit, followed by the dressing, and mix to coat the fruit. Best served chilled.
