Ingredients (2-4 Servings)
10 minutes cooking time
1 package Green Pea Tagliatelle
200 grams frozen green peas
2 tablespoons olive oil
1 clove garlic, minced
Zest and juice of a lemon*
1 handful parsley, finely chopped (or basil or any herb you like)
Salt and black pepper, to taste
Vegan cheese or hemp hearts, for topping (optional)
1. Cook the tagliatelle in well salted boiling water. Two minutes before the pasta is done, add the peas to the boiling water to thaw.
2. Drain and rinse the pasta and peas (use hot water). Add the olive oil, minced garlic, lemon zest and juice, herbs, and salt and pepper to the pot. Add the pasta and peas back in and mix well to coat.
3. Serve hot, topped with “cheese” or hemp hearts if you have them.
*Preserved lemon can be used instead of fresh lemon, or use jarred pesto, or even a tiny splash of white wine vinegar!
Frozen herbs can be used instead of fresh here if you don’t have any.
If fresh garlic is too sharp for you, you can sauté it before adding it.
