Hemp Butter Pesto Wraps

Pesto:

50 grams basil

1 clove garlic

Juice of a lemon (about 3 tablespoons)

2 tablespoons hemp seed butter

½ teaspoon sea salt

3 tablespoons olive oil

Wraps:

4 red beet wraps

50 grams spouts (bean, sunflower, radish, etc.)

1 large bell pepper, thinly sliced

2 avocados, thinly sliced

Optional tomatoes, lettuce, rucola, or any vegetables you like


To make the pesto, add the basil, garlic, lemon juice, hemp seed butter, and salt to a small food processor or tall container (for an immersion blender). Blend until broken down, then add the olive oil in a slow stream while blending until the pesto is smooth and the oil is fully incorporated

To make the wraps, lay the red beet wraps onto a flat surface. Add a large spoonful of pesto to the middle of the wrap, then top with sprouts, bell pepper, and avocado. Wrap them up tightly and cover in parchment or wax paper for transport
