Ingredients (2-4 Servings)
10 minutes cooking time
1 package Edamame Spaghetti
200 grams hummus
60 ml pasta water (reserved – important!)
20 grams parsley or other herbs, fresh or frozen
Salt and black pepper, to taste
1. Cook the spaghetti in well salted boiling water. Reserve 60 ml (4 tablespoons) of the pasta water just before draining the spaghetti. Rinse the pasta in hot water.
2. Add the hummus, reserved pasta water, herbs, salt, and pepper to the pot the pasta was cooked in. Add the pasta back to the pot and mix until well combined. Serve hot.
Basil, thyme, oregano, or jarred pesto (2-3 tablespoons) can be used here in place of parsley if you don’t have any.
